This roasted garlic green beans recipe is the ultimate side dish: it’s delicious, easy to make, and always a crowd pleaser. The green beans are tossed in olive oil and seasonings and then roasted to perfection in the oven. 

For special occasions, we love to pair these with our other most popular side dishes: Garlic Roasted Carrots and Honey Sriracha Brussels Sprouts. 

About the Recipe

These roasted garlic green beans are full of flavor! They are covered in garlic that gets crispy when baked in the oven. The fresh taste of the green beans plus the crunch of the garlic is incredibly good. 

If you’re serving picky eaters or vegetable skeptics, this side dish will convert them to green bean fans! 

Roasted Garlic Green Beans Ingredients

  • 12 oz green beans, trimmed
  • 2 tbsp olive oil
  • 5 cloves garlic, minced
  • ¼ tsp salt
  • ¼ tsp black pepper

Additions & Substitutions

Garlic: 

This recipe is loaded with garlic! For every green bean bite there’s added garlic flavor. If you’d like to tone it down, stick to 2 – 3 cloves of garlic. Or, simply remove some of the garlic from the green beans once they’ve been cooked in the oven. 


How to Make Roasted Garlic Green Beans

Step 1: 

Preheat oven to 425 degrees. Line a baking sheet with aluminum foil (for easy clean up).

Step 2: 

In a large bowl, toss together green beans, olive oil, garlic and seasonings. The green beans should be trimmed (cut off the ends). And if you like, you can also chop the green beans into smaller, bit-sized pieces. 

Step 3: 

Spread the green beans out on the baking sheet. As much as possible, lay the beans flat and not overlapping. If you have clumps of garlic, spread them out evenly over the green beans. 

Step 4: 

Cook for 10 minutes. Turn and bake for an additional 5 minutes, until the beans are tender and lightly browned. The beans will have a slight caramelization and the garlic will be crispy. When serving, scoop up any extra garlic that’s left on your baking sheet and spread it over the green beans. 

Optionally, top with another sprinkle of freshly ground salt and pepper. 

How Long to Cook Green Beans in the Oven 

Cook the green beans for a total of 12 – 15 minutes in the oven, turning them after about 10 minutes so that they cook evenly on both sides. 

Take the green beans out when they are lightly browned and tender. We like our green beans well done and tend to leave them in for a couple extra minutes (until they are well browned and a little crispy)!
