  • 3 lbs chuck roast cubed
  • salt & pepper to taste
  • 1 1/2 yellow onions chopped
  • 4 yukon gold potatoes cubed
  • 3 cloves garlic minced
  • 1/3 cup flour
  • 1 bottle Guinness Extra Stout (or regular Guinness)
  • 3 cups beef stock
  • 4 carrots peeled & sliced
  • 3 stalks celery sliced
  • 2 tbsp tomato paste
  • 2 bay leaves
  • 1 tsp white sugar
  • 3 sprigs fresh thyme (or 1/2 tsp dried thyme)
