- 1 1/2 yellow onions chopped
- 4 yukon gold potatoes cubed
- 3 cloves garlic minced
- 1/3 cup flour
- 1 bottle Guinness Extra Stout (or regular Guinness)
- 3 cups beef stock
- 4 carrots peeled & sliced
- 3 stalks celery sliced
- 2 tbsp tomato paste
- 2 bay leaves
- 1 tsp white sugar
- 3 sprigs fresh thyme (or 1/2 tsp dried thyme)
